I find that by incorporating shredde...Hey Kristina! I find that by incorporating shredded mozzarella in with the tofu - it really does makes it very hard to even tell the difference at all. Also, the fresh lemon juice is important - even though its a small amount - don't skip it. You can also add additional seasonings or fresh herbs in there - such as basil or parsley. And be sure its the soft silken tofu. But when I turned veg...I have always loved lasagna. But when I turned vegan I found that I love lasagna ever more! I make my "ricotta" with tofu, fresh basil, lemon juice, salt and pepper.
